Margherita Both the tomatoes and basil are harvested and delivered fresh to our place every morning. We receive them, wash them thoroughly, and work them by hand. We cut the tomatoes into small cubes and hand-pick the basil leaves. Then, we make a pesto with the basil leaves and extra virgin olive oil. We add sea salt and freshly ground pepper to our Italian mozzarella and then mix everything together. The result is spectacular.
